Measuring it right
- Spoon, don’t scoop. Spoon flour into the cup and level it with a knife. Scooping packs it down.
- A cup here is 240 ml, the US cup most online baking recipes use. A katori or tea glass is a different size in every home.
- Weigh when you can. A kitchen scale is the most exact way to bake, and it makes scaling a recipe simple.
Questions
How many grams is 1 cup of maida?
125 g, spooned and levelled. Cake flour is lighter at 115 g and bread flour is 127 g.
How many grams is 1 cup of sugar?
200 g for white sugar. Brown sugar is 213 g and icing sugar is 120 g.
Is a cup the same as a katori?
No. A cup here is the US cup, 240 ml. Katoris vary from home to home, so one katori of flour can weigh quite different amounts.
Why do my cups weigh differently from these figures?
Scooping a cup into the flour packs it down and can add 20 per cent or more. These figures are for spooning the flour in and levelling it off. Weighing is always the most exact.
Cooking from a saved reel?
Ruchy turns a reel, a link or a screenshot into a recipe you can cook, and in bakes it shows the grams for you, so you never convert by hand.
